Superfood Smoothie Bowl

This delicious smoothie bowl is so full of energising nutrients that after finishing it you'll basically want to run up a mountain, get in a fight with a bear then run home again. Okay so maybe I got carried away, but it honestly will give you such a huge boost of energy and vitality. Since starting my day with a smoothie I have noticeably felt a massive difference in my energy levels, which in turn has had a huge effect on my general mood. 

Up until last year for breakfast I would scoff down either a huge bowl of sugary cereal (Alpen/Crunchy Nut/Coco Pops) or a bagel with marmite, and then I would wonder why I was getting hunger pangs again at 11.30 and feeling exhausted by midday. I've realised now that by setting my day off with a big bowl of sugar that was incredibly low in nutrients I was causing my energy levels to spike very quickly then come crashing back down, so that I often felt drained, ill and grumpy. And because there was no substance to what I was eating it wouldn't fill me up enough to keep me going until lunch, which caused me to snack on more sugar, usually a cereal bar or dried fruit.  

Enter the Nutribullet! My NB is pretty much my baby. It's a complete game changer. I know it seems like an eye watering amount to spend on what is essentially a fancy blender but I promise you'll forget that as soon as you taste your first smoothie (who needs to pay rent anyway, right?) You can just chuck whatever you want in there and ta-daa it tastes like healthy heaven. My favourite thing about having a smoothie every morning is I can add any nutrient or superfood powders to it, I find these are the best way for getting my body everything it needs to be performing at it's best.

This bowl has a rich, creamy texture from the avocado (you can't taste this at all by the way) but it also has a bit of zingy sweetness from the fruit and the coconut water makes it very naturally refreshing. 

I added some Green Superfood Energy powder which I love. All of the powders by Amazing Grass include Maca, Spirulina, Wheatgrass, Flaxseed and plant based caffeine so they give you such a boost and make you feel like you're glowing from the inside. 


Serves 1
1/2 avocado
1 big handful spinach
1 kiwi
50g (3 cube-chunks) pineapple
1 tablespoon chia seeds
2 tablespoon oats
1/2 cup Vita Coco coconut water
1/2 cup unsweetened nut milk (I used almond but coconut would be good too)
1 tablespoon Amazing Grass Green Superfood powder in Acai and Goji flavour
1 tablespoon hemp seeds
1 tablespoon homemade goji mix (equal parts desicated coconut, flaxseed and goji berries)

1. Chuck everything in your blender and blend until sooth and creamy. 

2. Pour in to a bowl and add toppings of your choice, I had frozen berries, pecans and goji berries. 

Note: if this isn't sweet enough for you add a squeeze of natural sweetener such as maple syrup or honey.
